Ingredients

  • 18 whole white or cremini mushrooms stems removed and reserved
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • Mushroom stems finely chopped
  • ½ cup Italian breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons cream cheese softened
  • 2 tablespoons fresh parsley chopped
  • Salt and pepper to taste
  • Optional: ¼ teaspoon red pepper flakes or dried thyme for extra flavor

Instructions

Preheat Oven:

  • Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line with parchment paper.

Prepare Mushrooms:

  • Clean mushroom caps with a damp cloth or paper towel. Remove stems and finely chop them for the filling.

Make the Filling:

  • In a skillet over medium heat, add olive oil and butter. Sauté chopped mushroom stems and garlic for 3–4 minutes until soft and fragrant. Remove from heat.

Mix Ingredients:

  • In a bowl, combine sautéed mushroom mixture with breadcrumbs, Parmesan, cream cheese, parsley, salt, and pepper. Mix until evenly blended.

Stuff the Mushrooms:

  • Spoon the filling into each mushroom cap, pressing slightly to pack it in. Arrange stuffed mushrooms on the prepared baking sheet.

Bake:

  • Bake for 18–20 minutes, or until mushrooms are tender and the tops are golden. For extra crispiness, broil for 1–2 minutes at the end.

Serve:

  • Garnish with additional parsley and serve warm as a starter or side dish.

Notes

  • Make Ahead: You can prepare and stuff mushrooms a few hours ahead. Refrigerate and bake just before serving.
  • Add Protein: Mix in crumbled cooked sausage or bacon for a heartier version.
  • Dairy-Free Option: Use plant-based cream cheese and omit Parmesan or use a vegan alternative.
