Ingredients

  • 4 ears of corn husks removed
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1/4 tsp smoked paprika optional
  • 1 tbsp chopped cilantro optional
  • 1 lime cut into wedges
  • Salt to taste

Instructions

  • ✅ Preheat a grill or grill pan over medium-high heat.
  • ✅ Grill the corn for about 10–15 minutes, turning occasionally, until charred and tender.
  • ✅ In a small bowl, mix the mayonnaise and sour cream (or crema) together.
  • ✅ Brush the warm grilled corn generously with the mayo mixture.
  • ✅ Sprinkle each ear with cotija cheese, chili powder, and a pinch of smoked paprika if using.
  • ✅ Garnish with chopped cilantro and a squeeze of fresh lime juice.
  • ✅ Serve hot with lime wedges on the side.

Notes

  • Can’t find cotija cheese? Try feta or Parmesan as a substitute.
  • For a spicier kick, add hot sauce or cayenne pepper.
  • You can also cut the corn off the cob and make a Street Corn Salad version!
