Ingredients

For the Ice Cream:

  • 2 cups heavy cream
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • Optional: crushed cookies nuts, or fruit bits

For the Chocolate Coating:

  • 1 ½ cups semi-sweet chocolate chips or chopped chocolate
  • 2 tbsp coconut oil for smoother coating

Equipment:

  • Popsicle mold or small loaf pan
  • Popsicle sticks
  • Parchment paper

Instructions

Make the Ice Cream Base:

  • In a large bowl, whip the heavy cream until stiff peaks form.
  • Fold in condensed milk and vanilla extract gently until smooth.
  • Add any optional mix-ins if desired.

Fill the Molds:

  • Spoon the mixture into popsicle molds or a lined loaf pan.
  • Insert sticks and smooth the tops.
  • Freeze for 4–6 hours or until completely firm.

Make the Chocolate Coating:

  • Melt the chocolate and coconut oil together in the microwave in 30-second bursts, stirring between each, until smooth.

Dip the Bars:

  • Once frozen, remove bars from molds (dip in warm water for a few seconds to release).
  • Dip each bar in melted chocolate and place on a parchment-lined tray.
  • Freeze again for 15–20 minutes to set the coating.

Notes

  • Flavor ideas: Use strawberry, coffee, or matcha extract in place of vanilla.
  • Decorate: Drizzle with white chocolate, sprinkles, or crushed cookies before the chocolate hardens.
  • Storage: Keep in an airtight container in the freezer for up to 2 weeks.
