Fried Zucchini is a crispy, golden snack or side dish made from fresh zucchini slices coated in a seasoned breadcrumb mixture and lightly fried to perfection. This crowd-pleaser is easy to make and pairs perfectly with dipping sauces like ranch or marinara.

Ingredients

  • 2 medium zucchinis sliced into ¼-inch rounds
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • ½ teaspoon garlic powder optional
  • Vegetable oil for frying
  • Optional: ranch or marinara sauce for dipping

Instructions

Prepare Dredging Station:

    Set up three shallow bowls:

    • Bowl 1: flour with a pinch of salt and pepper
    • Bowl 2: beaten eggs
    • Bowl 3: breadcrumbs, Parmesan, garlic powder, and a bit more salt and pepper

    Coat the Zucchini:

    • Dredge each zucchini slice in flour, dip in egg, then coat in breadcrumb mixture. Press gently to help crumbs stick.

    Heat Oil:

    • In a deep skillet, heat about ½ inch of vegetable oil over medium heat. Oil is ready when a breadcrumb sizzles upon contact.

    Fry the Zucchini:

    • Fry slices in batches for 2–3 minutes per side until golden brown and crisp. Do not overcrowd the pan. Transfer to a paper towel-lined plate to drain excess oil.

    Serve:

    • Sprinkle with extra Parmesan or sea salt and serve warm with your favorite dipping sauce.

    Notes

    • Oven-Baked Option: Place breaded slices on a baking sheet and bake at 425°F (220°C) for 20 minutes, flipping halfway through.
    • Air Fryer Method: Cook at 400°F (200°C) for 10–12 minutes, shaking halfway.
    • Spicy Twist: Add a pinch of cayenne or smoked paprika to the breadcrumbs.
