Chicken Madeira is a restaurant-style dish featuring tender chicken breasts smothered in a rich mushroom and Madeira wine sauce, topped with melted mozzarella and tender asparagus. Inspired by the famous Cheesecake Factory dish, it's perfect for a cozy dinner or elegant meal at home.

Ingredients

  • 4 boneless skinless chicken breasts pounded to even thickness
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 oz sliced mushrooms cremini or button
  • 2 cloves garlic minced
  • 1 cup Madeira wine or dry Marsala as a substitute
  • 1 cup beef broth
  • ½ cup heavy cream
  • 1 tablespoon cornstarch + 2 tablespoons water optional, for thickening
  • cups shredded mozzarella cheese
  • 12 spears asparagus blanched or steamed until just tender
  • Fresh parsley chopped (for garnish)

Instructions

Prepare Chicken:

  • Season chicken breasts with salt and pepper. In a large skillet over medium heat, add olive oil. Sear chicken on both sides until golden brown and cooked through (about 4–5 minutes per side). Remove and set aside.

Sauté Mushrooms:

  • In the same skillet, melt butter. Add mushrooms and cook until browned and tender, about 5–7 minutes. Add garlic and sauté for 1 minute.

Make Madeira Sauce:

  • Pour in Madeira wine and beef broth. Bring to a simmer and cook for 8–10 minutes until reduced by half. Stir in heavy cream. Simmer for 2–3 minutes. (Optional: Mix cornstarch and water, then stir in to thicken.)

Assemble and Melt Cheese:

  • Return chicken to the pan. Spoon sauce and mushrooms over the top. Add a few asparagus spears on each piece of chicken. Sprinkle mozzarella over everything. Cover with lid or broil for 2–3 minutes until cheese is melted and bubbly.

Serve:

  • Garnish with chopped parsley. Serve hot with mashed potatoes, rice, or pasta.

Notes

  • Wine substitute: Marsala or dry white wine works well if Madeira isn’t available.
  • Vegetable option: You can substitute asparagus with green beans or spinach.
