- 1 cup cooked shredded chicken
- ¼ cup buffalo sauce like Frank’s RedHot
- 2 tbsp ranch or blue cheese dressing
- 4 slices of bread sourdough, white, or whole wheat
- 1 tbsp butter softened
- 1 cup shredded mozzarella or cheddar cheese or a mix
- Optional: green onions or jalapeño slices
Prepare the Chicken Filling:
In a bowl, mix shredded chicken with buffalo sauce and dressing until well coated.
Stir in optional green onions or jalapeños if using.
Assemble the Sandwiches:
Butter one side of each slice of bread.
Place two slices, butter-side down, in a skillet or on a cutting board.
Layer each with half the cheese, buffalo chicken mixture, and then the rest of the cheese.
Top with remaining bread slices, butter-side up.
Grill to Perfection:
Heat a skillet over medium heat.
Cook sandwiches for 3–4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.
-
Shortcut: Use rotisserie chicken for even faster prep.
-
Extra crispy: Grill with mayonnaise instead of butter for a golden crunch.
-
Make it spicy: Add a few dashes of hot sauce or sliced jalapeños inside.
-
Storage: Best enjoyed fresh, but can be reheated in a skillet or air fryer.
