Ingredients

For the Filling:

  • 4 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

For the Topping:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted

Instructions

  • ✅ Preheat oven to 375°F (190°C).
  • ✅ In a large bowl, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Toss to coat.
  • ✅ Pour the blueberry mixture into a greased 9-inch baking dish.
  • ✅ In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  • ✅ Add milk and melted butter to the dry ingredients and stir until just combined.
  • ✅ Spoon the batter evenly over the blueberry mixture (it won’t cover it completely).
  • ✅ Bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbling.
  • ✅ Let cool slightly before serving.

Notes

  • Serve warm with vanilla ice cream or whipped cream.
  • You can use frozen blueberries without thawing—just add an extra 1/2 tbsp cornstarch.
  • Swap blueberries with mixed berries for variation.
