Ingredients

  • 2 ripe avocados sliced
  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion finely sliced
  • ½ cup crumbled queso fresco or feta optional
  • 1 jalapeño thinly sliced (optional)
  • ¼ cup fresh cilantro chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Optional: sour cream hot sauce, or avocado crema for topping

Instructions

Prep the Veggies:

  • In a bowl, toss shredded cabbage with lime juice, olive oil, and a pinch of salt. Let it marinate for 5–10 minutes while preparing the rest.

Warm the Tortillas:

  • Heat tortillas in a dry skillet or over an open flame for 30 seconds per side until warm and pliable. Wrap in a towel to keep warm.

Assemble the Tacos:

  • Place 2–3 avocado slices on each tortilla. Top with marinated cabbage, cherry tomatoes, red onion, and jalapeño slices.

Add Cheese and Herbs:

  • Sprinkle queso fresco and chopped cilantro over the top. Add a squeeze of lime and a drizzle of hot sauce or crema if desired.

Serve Immediately:

  • Enjoy fresh with tortilla chips and salsa or a side of black beans.

  • Make it Vegan: Omit cheese or use a dairy-free alternative.
  • Protein Boost: Add black beans, grilled tofu, or chickpeas.
