- 2 ripe avocados sliced
- 8 small corn or flour tortillas
- 1 cup shredded red cabbage
- 1 cup cherry tomatoes halved
- ¼ cup red onion finely sliced
- ½ cup crumbled queso fresco or feta optional
- 1 jalapeño thinly sliced (optional)
- ¼ cup fresh cilantro chopped
- Juice of 1 lime
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Optional: sour cream hot sauce, or avocado crema for topping
Prep the Veggies:
In a bowl, toss shredded cabbage with lime juice, olive oil, and a pinch of salt. Let it marinate for 5–10 minutes while preparing the rest.
Assemble the Tacos:
Place 2–3 avocado slices on each tortilla. Top with marinated cabbage, cherry tomatoes, red onion, and jalapeño slices.
