Ingredients

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 ½ teaspoons almond extract
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup almond flour finely ground almonds
  • ½ cup whole milk
  • Optional topping: sliced almonds powdered sugar, whipped cream, or berries

Instructions

Preheat and Prepare Pan:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch round or square cake pan and line the bottom with parchment paper.

Cream Butter and Sugar:

  • In a large bowl, beat the softened butter and sugar until light and fluffy (about 2–3 minutes).

Add Eggs and Almond Extract:

  • Add eggs one at a time, beating well after each.
  • Mix in the almond extract.

Combine Dry Ingredients:

  • In a separate bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.

Mix Wet and Dry:

  • Add dry ingredients to the butter mixture in 2 batches, alternating with the milk. Mix just until combined — don’t overmix.

Bake:

  • Pour the batter into the prepared pan.
  • Smooth the top and sprinkle with sliced almonds (if using).
  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve:

  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Dust with powdered sugar before serving, if desired.

Notes

  • Make it gluten-free: Use a 1:1 gluten-free flour blend in place of all-purpose flour.
  • Add citrus: A touch of lemon or orange zest adds brightness.
